• 8 oz high quality dark chocolate 60% cacao


• 1 quart heavy or light cream


• 1 ¼ cup granulated sugar


• 1 cup water

• 1 tablespoon vanilla

• 1 cup Tennessee Shine Co. 135PF Straight Off The Still

STEP ONE: Break chocolate into bite-size pieces


SET TWO: In a large saucepan over medium heat combine chocolate pieces and cream. Stir until smooth.


STEP THREE: Add in sugar and melt until dissolved . Then add in water and vanilla and stir.

STEP FOUR: Bring to a boil for 2 minutes

STEP FIVE: Remove from heat, allow to cool for 20 minutes

STEP SIX: Add in Straight Off The Still
